Preparing the dish with a meat substitute of your choice can leave you with a meaty texture that leaves you nice and full long after you have enjoyed the meal. Seasoned with a blend of Mexican spices you can be sure that the flavour offered by the chilli will leave you craving more. Paired with some natural brown rice, this is the perfect combo to make your Monday feel like a Friday! 



Fresh Falafel Served In Toasted Pitas 



Falafel is a staple for vegans around the world and when freshly fried this meal is the perfect example of plant-based junk food. With taco kits being available in every supermarket across the country, there are no additional ingredients needed which not only saves you time but money as well. Add a sprinkle of lime juice for that extra zing on your tongue. 



Curried Chickpeas With Fresh Herbs 



Served with a carb of your choice, curried chickpeas are one of the most diverse meals on this list. I have had this meal two times this week, after making one bulk portion I was able to plate it with rice and pitas on two different days. You can make this as easy or complicated as you like depending on your experience. I like to cook up some onions garlic and chilli with a hefty portion of mild curry pounder, from there you can dump in your chickpeas, chopped tomatoes and some coconut milk for an extra creamy finish. Now you can just leave it to simmer until you're ready to serve. Whilst 30 minutes is more than enough time for this meal if you leave this for longer the chickpeas absorb more of the flavour which helps take the flavours to the next level.
